Shrimp and Broccoli tastes like Chinese take-out, but without the grease andguilt

Ingredients
  • 1 pound shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 8 ounces mushrooms sliced
  • 4 cloves garlic minced
  • 2 cups broccoli florets if fresh par-cooked, if frozen-thawed
  • 8 ounces artichoke hearts sliced
  • 1/4 cup white wine
  • salt and black pepper to taste
  • ½ cup chicken seafood stock
  • 1 tablespoon butter
  • 1 tablespoon flour
Instructions
  1. Pre-cook the broccoli if using fresh broccoli.
  2. Heat large skillet over high heat, add olive oil and saute the mushroom for about 5 minutes.
  3. Add the shrimp and garlic and continue cooking until the shrimp are almost done.
  4. Deglaze the pan with white wine.
  5. Add the pre-cooked or thawed broccoli and sliced artichoke hearts.
  6. Add the seafood stock, season with salt and pepper to taste.
  7. Roll the butter in flour and add it to the pan to thicken the sauce.
  8. Serve with pasta.
