Pineapple Mojito is a tropically flavored, sweet and refreshing cocktail, made with fresh pineapple, rum, mint, and pineapple juice.

Ingredients
  • 10 fresh mint leaves medium to large
  • 1/2 cup white rum coconut rum also is great in this recipe
  • 2 tablespoons simple syrup
  • 1 fresh lime juiced
  • 1 cup pineapple juice no-sugar added or freshly juiced
  • 1/2 cup club soda or Sprite - but it will be sweeter
Garnish:
  • Pineapple wedges lime wheels, maraschino cherry, and/or fresh mint sprigs
Instructions
  1. Start by adding the fresh mint leaves and the lime juice to a cocktail shaker and gently muddle them, but try not to tear them.

  2. Next, add the simple syrup, as much as you want, based on your desired level of sweetness.

  3. After that, add the pineapple juice and the rum.

  4. If you're using a cocktail shaker, fill it with ice, close with the lid, and shake vigorously for 10-15 seconds until the mixture is well-chilled. But, if you are using a glass, fill it with ice and stir the ingredients thoroughly to combine.

  5. Finally, distribute the mixture into serving glasses, fill about half, and add soda water, leaving a bit of space at the top. Give everything a gentle stir, top with pineapple wedges, or lime, fresh mint, and maraschino cherries, and serve.
