Crispy Parmesan Potatoes are delicious made with just three ingredients, so crispy and cheesy on the outside, and buttery on the inside.

Ingredients
  • 20 mini potatoes washed well, and halved
  • 1 cup parmesan cheese finely grated - more if needed
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt optional
Optional ingredients:
  • 1/8 teaspoon ground black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
Instructions
  1. Preheat oven to 425 degrees F.

  2. Cut the potatoes in half, and add them to a bowl with the olive oil and seasonings (in using them from the optional ingredients list). Mix well to combine.

  3. On a baking sheet, that would fit the potatoes, add a layer of parchment paper, and sprinkle the parmesan in an even layer.

  4. Arrange the potatoes tightly, flat side down on the parmesan cheese, until the dish is full.

  5. Bake in the preheated oven for 25-30 minutes or until the potatoes are soft.

  6. Let them cool until the cheese is hard and crisp. Loosen the sides with a spatula and serve with your favorite dipping sauce! I like mine with Ranch or Tzatziki on the side.
