Ingredients
Chicken:
  • 6 chicken thighs skinless or use chicken breasts
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon butter unsalted
Mushroom Sauce:
  • 1 tablespoon butter unsalted
  • 16 ounces mushrooms sliced
  • 1 teaspoon dried thyme
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
Instructions
  1. Season the poultry with salt, pepper, and garlic powder.
  2. In a cast-iron skillet, melt 1 tablespoon of butter. Add the chicken and brown it on both sides for about 3-4 minutes, look for a golden brown finish.
  3. Once browned, remove from the pan, and set aside on a plate, cover with foil.
Mushroom Sauce:
  1. Add 1 tablespoon of butter to the skillet and melt. Add the sliced mushrooms and dried thyme and cook until golden brown, for about 5-8 minutes, stirring from time to time.
  2. Then, add the heavy cream and chicken broth, and stir for 1-2 minutes. Season with more salt and pepper.
  3. Add the chicken and simmer for about 10 minutes, or until thick and creamy.
  4. Serve as is or with pasta.
