Ingredients
  • 8 oz package uncooked soba noodles
  • 1 head of broccoli cut into florets
  • 2 tablespoons olive oil
  • 1 package extra firm tofu cut into cubes
SAUCE:
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 2 tablespoons creamy peanut butter
  • 2 tablespoons brown sugar
  • 1/4 teaspoon crushed red pepper
  • 4 garlic cloves minced
Garnish:
  • 4 green onions chopped
  • 1 teaspoon sesame seeds
Instructions
  1. Bring a large saucepan of water to a boil. Add soba noodles and cook per package instructions. Drain and set aside.
  2. Place a large saute pan over medium heat, add olive oil, add tofu and saute on each side until browned and crispy.
  3. Add the broccoli to the pan. Cook for 3-5 minutes.
  4. Combine sauce ingredients in a bowl and add to the pan. Stri and cook for 2 minutes. Add the noodles and cook for another 2-3 minutes.
  5. Garnish with sesame seeds and green onions.
