Ingredients
Salad:
  • 4 cups cherry tomatoes halved
  • 1 medium red onion chopped
  • 2 cups white mushrooms
 sliced
  • 1 green bell pepper seeded and chopped
  • 1 cup pepperoni slices
  • 2 cups cubed Mozzarella cheese
  • 1 cup fresh basil chopped
  • 1 pound of bowtie pasta cooked to al dente, cooled under cold water, then drained
Dressing:
  • 1 teaspoon salt
 or to taste
  • 1 teaspoon Italian dried seasoning
  • 2 rounded tablespoons tomato paste
  • 6 tablespoons red wine vinegar
  • 1/3 cup extra-virgin olive oil
  • 1 teaspoon Freshly ground black pepper
Instructions
  1. Mix the Salad ingredients in a large bowl.
  2. In a separate bowl stir together the Dressing ingredients.
  3. Add to the salad and stir to combine.
  4. Serve or store in the fridge,
