Paleo Pumpkin Mug Cake is a single-serve, healthy way to fix that pumpkin craving we all get when the fall season comes around.
Lightly grease two microwave-safe cups. Set aside.
Add all the ingredients to a small bowl and stir until combined.
Transfer to the prepared cups or cups if you use a larger one.
Microwave on HIGH for about one and half a minute or until a toothpick placed in the center comes out clean.
Check for doneness and if needed microwave more.
Let the mug cake cool for 3-5 minutes and after that top it with whipped coconut cream and serve.
