Ingredients
  • 4 cups whole milk
  • 3 cups heavy cream
  • 1 tablespoon vanilla extract
  • 6 eggs
  • 2/3 cup white sugar or use just 1/2 cup for a not-too-sweet drink
  • 1 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Instructions
  1. In a large bowl, beat together the eggs, sugar, and salt for 3-5 minutes, or until frothy.

  2. Place a medium saucepan over medium-low heat, and whisk together the milk, cream, nutmeg, and cinnamon until it just begins to simmer. Continue to steam on low heat for 15 minutes, stirring constantly.

  3. Slowly while stirring constantly, pour 1/4 cup of the milk mixture into the egg mixture, whisking to combine. Repeat this three more times, until you whisked 1 cup of the milk mixture into the eggs.

  4. Now, add the egg mixture to the saucepan with the milk over medium-low heat and whisk constantly for about 15 minutes, until it thickens. The mixture should reach 165 degrees F.

  5. Remove from heat and stir in vanilla extract until well combined.

  6. Strain and refrigerate the drink for at least 3-4 hours or overnight before serving.
