Pre-heat oven to 425 degrees F.

Line a baking sheet with parchment paper and set aside.

On a lightl floured surface roll the dough into a rectangle, the long side facing you being about 15-20 inches.

Brush with 1 tablespoon of melted butter and sprinkle Italian seasoning herbs and red pepper flakes over the surface.

Arrange the pepperoni in about 5 rows, 8-10 pepperoni slices per row. Start about 2 inches from the side facing you, and leave about 3 inches from the top side.

Sprinkle shredded mozzarella cheese evenly over the surface.

Roll up the dough tightly into a log, starting from the long side that is closer/facing you.

Cut into about 1 inch thick rolls, place them on the prepared baking sheet. Brush with remaining melted butter or olive oil.

Bake for 12-17 minutes or until golden brown. Serve immediately with marinara sauce for dipping.
