Chicken Marsala is a one-pan Italian inspired dish that is made with chicken and mushrooms in a rich Marsala based sauce.

Ingredients
Chicken:
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon ground black pepper
  • 3 large boneless skinless chicken breasts or 4 small chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
Marsala Sauce:
  • 2 tablespoon unsalted butter
  • 8 ounces baby Bella mushrooms sliced
  • 4 cloves garlic minced
  • 1/2 cup dry Marsala wine
  • 1 1/3 cup low-sodium chicken broth
  • 1/2 cup half and half or heavy cream
  • 2 tablespoons fresh chopped parsley
Instructions
  1. In a shallow dish season flour with salt and pepper.
  2. Dredge the chicken into the flour mixture and shake off excess.
  3. Place a cast-iron skillet over medium-high heat. Add 2 tablespoons of olive oil and 2 tablespoons of butter. Once simmering, add the chicken and cook on each side for 3-4 minutes, until browned.
  4. Transfer chicken to a plate. Cover with foil to keep warm.
  5. In the same pan, melt 2 tablespoons of butter. Add the mushrooms and saute for about 2-3 minutes until browned, then add the minced garlic and cook for another 1 minute.
  6. Pour the Marsala wine to the skillet and bring to a boil. Boil for 3-4 minutes, while scraping off the browned bits of chicken.
  7. Pour in the cream and return the chicken back into the sauce. Cook until the sauce thickens.
  8. Garnish with chopped parsley and serve with pasta.
