Ingredients
  • 1 1/4 cup oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1/4 cup white granulated sugar
  • 1 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 eggs lightly beaten
  • 2 tablespoons milk if needed
  • 1/2 cup blueberries
  • 2 tablespoons butter for greasing the pan
Instructions
  1. In a large bowl mix together the yogurt, eggs, lemon juice, lemon zest, and vanilla until smooth.
  2. In another bowl mix sugar, oat flour, baking powder, baking soda, salt.
  3. Add the egg mixture to the flour mixture and stir until fully combined.
  4. If the batter is too thick, add a bit of milk.
  5. Preheat an electric griddle to 350 degrees F or a non-stick skillet over medium-high heat.
  6. Add the butter and melt it, spread all over the cooking surface.
  7. Pour ¼ cup portions of the pancake batter, add 5-6 blueberries on top.
  8. Cook until bubbles start forming and the sides are set about 2-4 minutes, flip and cook for 2-4 minutes on the other side.
  9. Serve with favorite toppings.
