Ingredients
Salad:
1large English cucumberchopped
1medium red onionthinly sliced
4medium tomatoessliced
1red bell peppercored and sliced
1yellow bell peppercored and sliced
1tablespooncapers
8ozGreek feta cheesecubed
1cupblack olivesor Greek Kalamata olives pitted and sliced
1/4cupfresh parsleychopped
Greek Salad Dressing:
1tablespoondried oregano
1/4cupextra virgin olive oil
2tablespoonsred wine vinegar
2tablespoonslemon juice
1/2teaspoonground black pepperoptional
1/4teaspoonkosher salt
Instructions
Prepare all the veggies by washing and chopping them.
Add the ingredients to a bowl.
Greek Salad Dressing:
Whisk all the Salad Dressing ingredients in a medium bowl.
Pour Salad Dressing over the salad and serve immediately. Toss to combine, taste for salt and pepper, and serve.
