Ingredients
1 1/2lbscherry tomatoesor Roma tomatoes - ripe
14.5ozcan petite diced tomatoes
1/4cupchopped green onions
1/2red onionchopped
1mangopeeled, seeded and diced
1jalapeno pepperseeds removed and roughly chopped
1red chili pepperseeds removed and roughly chopped
1/3cupfresh cilantro
2clovesgarlicroughly chopped
2tablespoonsfresh lime juice
1teaspoonlime zest
1/2teaspoonchili powder
1/4teaspoonground cumin
Salt and pepper to taste
Instructions
Add all the ingredients to a food processor, except the mago, and pulse in 1-second bursts until finely chopped, but still a bit chunky.
Add to a bowl, and add the diced mango, taste and adjust for salt and pepper.
Garnish with chopped parsley and lime wedges.
Store in refrigerator in an airtight container for up to 1 week.
Serve with corn chips.
