Ingredients
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic minced
  • 1 1/2 tablespoon taco seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 4 cups 1 pound shredded rotisserie chicken without the skin
  • 1/2 cup salsa
  • 10-12 warm tortillas corn or flour
Toppings:
  • jalapeños
  • avocado
  • cilantro
  • shredded red cabbage
  • corn
  • sour cream
  • fresh squeezed lime juice
Instructions
  1. In a large heavy-bottom saucepan over medium-low heat, heat the olive oil.
  2. Add the garlic and cook for 1 minute, then add the taco seasoning, onion powder, salt and pepper, stir to combine.
  3. Add the shredded chicken and stir to coat with the spice mixture. If needed, add 2-3 tablespoons of water.
  4. Remove from the heat and stir in the salsa.
  5. Serve tacos on warm tortillas with your favorite toppings!
