Ingredients
  • 1 lb elbow macaroni
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 1/2 cup milk
  • 1 cup heavy cream
  • 1 cup chicken broth or vegetable broth
  • 1 teaspoon dry mustard
  • pinch of nutmeg
  • pinch of cinnamon
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup pumpkin puree
  • 1 teaspoon hot sauce
  • 2 cups sharp cheddar cheese shredded
  • 1/2 cup Mozzarella cheese shredded
Instructions
  1. Boil pasta according to package directions, aiming for al dente. Drain well, do not rinse, toss it with some olive oil and set it aside.

  2. In the meantime, in a large pan over medium heat melt the butter.

  3. Whisk in flour and cook for 1 minute.

  4. While stirring, add milk, cream, and broth a little at a time. Whisk until smooth. Stir in the pumpkin puree.

  5. Add dry mustard, nutmeg, cinnamon, salt, ground black pepper, and hot sauce. Stir and cook over medium heat until the mixture comes to a boil. Boil for 1 minute.

  6. Remove from heat, and stir in the cheeses, until smooth.

  7. Stir in the macaroni. Taste and adjust for salt and pepper.
