Ingredients
  • 2 2/3 - 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 4 tablespoons white granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 3 eggs
  • 1 teaspoon vanilla
  • 3 tablespoons vegetable oil
  • 1/4 cup buttermilk
  • 2 cups eggnog
Instructions
  1. Preheat and lightly spray waffle iron with non-stick cooking spray.

  2. In a large bowl mix flour, baking powder, sugar, salt, cinnamon, and nutmeg.

  3. In a medium bowl beat together the eggs, vanilla, vegetable oil, buttermilk, and eggnog.

  4. Blend the egg mixture into the dry ingredients until completely combined.

  5. Scoop batter by about ½ cupfuls onto the heated waffle iron and cook until no steam is escaping from the closed iron.

  6. Repeat with the remaining batter.

  7. Serve with maple syrup, whipped cream, nutmeg, and orange zest.
