Ingredients
  • 2 eggs at room temperature
  • 2/3 cup milk at room temperature
  • 1 tablespoon unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 1/4 teaspoon nutmeg
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 ripe bananas finely chopped
  • Vegetable oil for frying
Glaze:
  • 2 cups powdered sugar
  • 4 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Pinch of ground cinnamon
Instructions
  1. In a medium mixing bowl, whisk together the eggs, milk, melted butter, and vanilla. Set aside.

  2. In a large bowl, combine the flour, brown sugar, baking powder, salt, nutmeg, cinnamon.

  3. Add the wet ingredients into the dry ingredients and mix with a spatula just until combined.

  4. Stir in the chopped bananas until combined.

  5. Place a large pot over medium-high heat and add 2 or 3 inches of vegetable oil, heat until the oil reaches 350 degrees F.

  6. Using a small cookie scoop drop 3-4 scoops of the fritter dough into the hot oil. Cook for 4-5 minutes, flipping often until golden brown.

  7. Remove the fritters and place them onto a paper towel-lined tray to drain excess oil. Repeat with the remaining dough.

  8. Let the fritters fully cool and make the glaze by whisking together the powdered sugar, milk, vanilla, and cinnamon until smooth.
