Ingredients
  • 4 cups sweet corn grilled or from a can
  • 1 tablespoon olive oil
  • 2 avocados diced
  • 1 cup thinly sliced radishes
  • 1 jalapeno pepper deseeded and diced
  • 1 small red onion diced
  • 1 cup cotija cheese crumbled
  • Dressing
  • 1/4 cup greek yogurt
  • 1/4 cup mayo
  • 2 limes juiced
  • 2 cloves garlic minced
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • salt to taste
Instructions
  1. In a medium bowl, add all dressing ingredients and mix well.

  2. Place a cast iron skillet over medium-high heat and all the olive oil.

  3. Once hot add the corn and cook until slightly charred, about 7 minutes.

  4. Transfer the charred corn to a large bowl

  5. Add the avocado, jalapeno, radishes, and onion, and mix well.

  6. Add the dressing and 1/2 of the cotija cheese and mix well.

  7. Sprinkle the remaining cheese on top and some cilantro.

  8. Serve or cover and chill for up to 8 hrs before serving.
