  • 2 tablespoons olive oil
  • 1 medium sweet onion diced
  • 6 cloves garlic minced
  • 1 1/2 tablespoons white vinegar
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup hot pepper sauce
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 1 cup cheddar cheese shredded
Cornstarch Slurry:
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth
For serving:
  • 6 brioche hamburger buns
Instructions
  1. Add the oil to a large cast iron skillet on medium heat.
  2. Add the diced onion and minced garlic. Cook for about 3-4 minutes until the onion starts to soften, stirring a few times.
  3. Add the chicken to the pan and break it apart with a wooden spoon or spatula. Distribute evenly and mix in with the onion. Cook for 10 minutes stirring a few times.
  4. Add the salt, pepper, cayenne pepper, white vinegar, Worcestershire sauce and hot pepper sauce, stir to combine.
  5. In a small cup mix the chicken broth and cornstarch together, add the slurry to the pan. Stir to combine and cook for another 5 minutes on low heat or until the mixture is only slightly liquidy.
  6. Turn off the heat, mix in the shredded cheese.
  7. Serve on toasted brioche buns.
  8. Optional: top with diced tomatoes, sour cream and cilantro.
  9. Store leftovers in an airtight container in the fridge for up to 4-5 days.
