Ingredients
  • 1 lb. mini smokies or mini hot dogs patted dry
  • 1 lb. bacon each slice cut into 3" strips
  • 1/3 cup maple syrup
  • 1/4 cup brown sugar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
Buffalo Sauce Aioli (optional):
  • 1/4 cup Buffalo sauce
  • 1 cup mayo
Instructions
  1. Preheat oven to 400°F and line a medium baking sheet with parchment paper. Set aside.

  2. Using paper towels, pat dry the smokies before wrapping in bacon.

  3. Next, shorten the bacon strips, by cutting them evenly in 3 pieces. Then, wrap the bacon around the smokies, and place on the prepared baking sheet seam side down.
  4. In a medium bowl, combine maple syrup with brown sugar, smoked paprika and cayenne pepper. Brush onto the bacon wrapped smokies.

  5. Bake for about 20 minutes, or until bacon is crisp. Mid baking, brush the smokies again with the juices from the pan, to prevent the bacon from drying out.

  6. In a small bowl mix Buffalo sauce and mayo until fully combined.

  7. Serve the smokies hot or warm with the dipping sauce on the side.
