Ingredients

  • 4 cups whole milk
  • 2 cups heavy cream
  • 1 tablespoon vanilla extract
  • 4 eggs
  • 4 egg yolks
  • 2/3 cup white sugar or use just 1/2 cup for a not too sweet drink
  • 1 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Place a medium saucepan over medium-low heat, and whisk together the milk and vanilla until it just begins to simmer. Remove from heat.

  2. In a separate large bowl, beat together the eggs, yolks, sugar, nutmeg, and salt for 3-5 minutes, or until frothy.

  3. Slowly add the egg mixture into the simmered milk, whisking to combine.

  4. Return the saucepan over medium-low heat and whisk constantly for about 5 minutes. The mixture should reach 165 degrees F.

  5. Remove from heat and pour in the heavy cream, stir until well combined.

  6. Strain and refrigerate the drink for at least 3-4 hours or overnight before serving.
