Ingredients
  • 4 medium tomatoes ripe - sliced into wedges
  • 1 small red onion thinly sliced
  • 1 tablespoon basil chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon oregano optional
  • 1 cloves garlic minced - optional
  • Salt and freshly ground black pepper to taste
Instructions
  1. In a mixing bowl, combine the diced tomatoes, sliced onions, and fresh herbs. Also, add the oregano and garlic if using.

  2. Drizzle with olive oil and balsamic vinegar. Gently toss to combine.

  3. Season with salt and pepper to taste.

  4. Allow the onion tomato salad to marinate in the fridge for about 15-20 minutes before serving.

  5. Store the salad in an airtight container in the fridge for up to 2 days.
