- Let’s start with the fact that this is NOT a low calorie meal, please indulge into its creamy glory!
- Don’t over cook the pasta, preferably it should be served al dente.
- Make sure you stir pasta often, so it doesn’t stick to the bottom of the pan and burn.
- I like to brown my chicken and have the inside just a little pink so it continues to cook in the sauce.
- You can use already cooked chicken or rotisserie chicken to reduce effort and time.
- The spinach is optional, you can add more or less based on your own preference.
- Use store bought sliced cheese to reduce the prep time.

Ingredients
- 2 tablespoons olive oil
- 2 chicken breast skinless
- 2 tablespoons butter
- 1 medium onion diced
- 5 garlic cloves minced
- 2 cups fusilli pasta
- 1 cup cream
- 2 cups chicken broth
- 4 ounces cream cheese room temperature and cubed
- 1 1/2 cups ham cubed
- 10 slices Swiss cheese
- 2 cups fresh spinach
- salt and pepper
Garnish:
- 1/4 cup parmesan cheese
- Parsley chopped
Instructions

Add olive oil to a large skillet over medium heat. Once the oil is hot add the chicken breast and cook for 5 minutes on each side. Remove from pan, slice and set aside.

NOTE: you can use rotisserie chicken or already grilled chicken to skip this step.

Add butter to the pan, add diced onion and garlic, cook for about 3 minutes, until soft. Stir occasionally.

Add the pasta, broth and cream. Season with salt and pepper, bring to a boil and cook for about 12 minutes on low-medium heat. Stir often, so pasta won't stick to the bottom of the pan.

Once pasta has been cooked, stir in the cream cheese. Stir on low heat until fully melted and combined. Add back the sliced chicken and cubed ham. Stir and cook for about 5 minutes.

Stir in spinach and cook for 2 minutes, until wilted.

Top with sliced Swiss cheese. Turn off heat, let the cheese melt.

Garnish with grated parmesan and fresh parsley.
