Pasta recipes are very popular on the blog, as I am always looking to make easy and quick recipes. I have a Ground Beef Stroganoff version, and I am adding a chicken one, based on popular demand. This One Pan Chicken Ranch Pasta is another favorite that you should try.
Easy Chicken Stroganoff Recipe
Chicken Stroganoff is a great quick and easy dinner, that is ready in about 30 minutes and is usually a hit with everyone. We eat a lot of chicken as we usually buy it in bulk, so I am always trying to cook it in more creative ways. This meal is a winner, its creamy, hearty, very flavorful and makes delicious leftovers. The thick egg noodles, are fantastic covered in the luxurious and rich mushroom sauce.
How to make the creamiest Chicken Stroganoff Recipe:
- Use a mix of cream cheese, sour cream and cream of mushroom soup. That will give this dish the most amazing texture!
- If you want to make the meal lighter, skip the cream cheese and cream of mushroom soup and just add a little light cream and plain whole milk yogurt.
- For best flavors, cook the chicken until slightly browned, before adding the rest of the ingredients.

What is Condensed Cream of Mushroom Soup?
Condensed soup is a canned variety of soup that is prepared with a reduced proportion of water. A liquid, like water or milk is added to the soup when heated up. Condensed soup is used often to add more flavor and creaminess in many recipes.
Condensed Cream of Mushroom Soup substitute:
If you can’t find Condensed Cream of Mushroom Soup, or simply want a homemade version, you can use the below recipe:
Ingredients:
- 4 ounces baby Bella mushrooms, finely diced
- 6 tablespoon unsalted butter
- 2/3 cup all purpose flour
- 2/3 cup whole or skim milk
- 2/3 cup chicken broth or veggie broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground thyme
- salt and pepper to taste
Directions:

Place a medium sauce pan over medium heat. Once hot, add the butter and melt it.
- Add diced mushrooms and cook stirring for 2-3 minutes.

Add flour to the mushroom and butter mix and stir well to combine and form a paste.

Whisk in milk slowly until fully combined with no lumps.

Whisk in broth, slowly again, until fully combined.

Stir in garlic, onion powder, thyme and adjust for salt and pepper.

Whisk the mixture until it starts to simmer. Let it simmer on low heat for about 2 minutes. The soup should be smooth and creamy. If its too dense, whisk in a little more milk or broth.

When replacing the Condensed Cream of Mushroom Soup use a 1:1 ratio, so if you are using a 10 1/2 ounces can of condensed soup, you will need 1 1/3 cup of the homemade version to replace in recipes.

The homemade soup can be stored in an airtight container in the refrigerator for up to 3-4 days.
How to freeze Chicken Stroganoff:
To freeze, transfer the mixture to a buttered 9-by-13-inch freezer-to-oven baking dish. Cover tightly with aluminum foil. Freeze for up to 6 months. Bake, frozen and covered with foil, at 350°F, for 1 hour.

- 2 tablespoons butter
- 12 oz baby bella mushrooms sliced
- 1 medium onion chopped
- 6 cloves garlic minced
- 2 chicken breasts cut into 1 inch chunks or 1 lb ground chicken meat
- 1 1/2 cups chicken broth
- 1 can (10 1/2 ounces) cream of mushrooms soup condensed
- 1/4 cup all-purpose flour
- 4 ounces cream cheese cut into cubes and at room temperature
- 1 cup sour cream
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 3/4 teaspoon salt
- 6 cups cooked egg noodles
- Fresh parsley chopped

Cook egg noodles per box directions. Drain, toss with a drizzle of oil and set aside.

In the meantime, place a large, 10 inch cast iron skillet over medium heat. Once hot, add butter and melt.

Add mushrooms, onions and garlic and cook for 5 minutes, stirring occasionally, until tender. Remove from skillet to a small bowl, set aside.

Increase heat to medium-high. Add the chicken to the skillet. Cook for about 5-7 minutes, stirring frequently, until golden brown.

Stir in 1 cup of chicken broth, red pepper flakes, salt and pepper. Heat to boiling.

Whisk flour with the remaining 1/2 cup of broth until fully combined. Add to pan and stir to combine. Add the cream of mushroom soup and stir to combine.

Add the cream cheese and stir to combine, breaking it down until fully melted.

Add the cooked mushrooms mixture to the skillet, stir and wait for it to start boiling.

Taste and season with salt and pepper if needed.

Remove from heat and stir in sour cream until fully combined.

Stir in cooked egg noodles or serve on top of noodles.

Garnish with parsley.
