  • 8 oz. spaghetti
  • 1 tablespoon olive oil
  • 1 lb. boneless skinless chicken breasts cut into 1 inch cubes
  • 2 cloves garlic minced
  • 1/2 cup low-sodium chicken broth
  • 2 cups pesto sauce homemade or store-bought
Garnish:
  • 1/2 cup freshly grated Parmesan Cheese
  • freshly chopped parsley for garnish

  1. Cook the pasta according to the package directions.
  2. In the meantime, place a large skillet over medium-high heat and add olive oil. Season the chicken with salt and pepper, then add it to the sizzling oil. Cook until the chicken is nicely seared, and looks golden brown.
  3. Add the garlic to pan, stir and cook for one minute, until fragrant.
  4. Deglaze the pan with the broth and then add the pesto sauce. Stir to combine.
  5. Allow the mixture to simmer, then add the cooked pasta. You can add water to the mixture if it thickens more than you prefer. Toss to cover the pasta in the pesto sauce.
