Cobb Salad Recipe

Chicken Cobb Salad
Cobb Salad highlights the beauty of a simple meal. It does not have a tedious cooking process, nor does it use ingredients that are difficult to find.
I super love this recipe because it is straightforward and uncomplicated. There will always be times where I feel lazy, so I mostly make this dish when I want to eat something quick.
Not to mention, it strays away from the basic salad structure by utilizing avocados and tomatoes. Most people, especially kids, may easily get fed up with greens, but this one just makes them want to eat more.

Is Cobb salad healthy?
Absolutely. I highly recommend this to people who are trying to live a healthier lifestyle. It consists of all the necessary nutrients since it has fruits and vegetables.
Just like other versions, my recipe is also low carb but high in protein and fiber. This is perfect for those who are following the Keto diet.
How to make the best Cobb Salad?
- Cook the meat. Season to taste and pan-fry the chicken using olive oil until well done. Fry the bacon and boil the eggs afterward.
- Prepare the dressing. Make sure your dressing is chilled before serving. If you are using store-bought ones, place them in the fridge the night before or an hour before drizzling. Otherwise, you can craft your own dressing by mixing the following ingredients until paste-like mayo, yogurt, avocado, olive oil, garlic, lemon juice, parmesan, and seasoning.
- Assemble. Shred the chicken or cut it into preferred sizes. Do the same for the bacon and eggs. In your serving bowl, lay the lettuce first before placing the chicken, bacon, and eggs.
- Serve. Drizzle a generous amount of dressing. Toss till well coated and then serve.
What else can you add to it?
For more flavor and crunch, I suggest adding these toppings to upgrade your Cobb Salad:
- Crunchy greens. Spinach, carrots, and cucumber.
- Nuts and seeds. Walnuts, pumpkin seeds, and almonds.
- Dried berries. Blueberry, raspberry, raisins.
- Cheese. Parmesan, cheddar, and gouda.
- Herbs. Mint, basil, and parsley.
Can you make a Cobb Salad in advance?
Being a nutritious meal, there are ways to store this dish so that you can eat it a later time.
The key to keeping it fresh is to separate the dressing. As such, I suggest only drizzling it on portions that you are sure to finish.
For leftovers, you can store the ingredients separately and assemble it later if you want to be sure. However, an easier method I follow is keeping it in a container with a paper towel draped on top to absorb excess moisture.
By doing so, you can enjoy this dish for up to a week. Just make sure, there is no dressing or at least scrape the dressing off.

Recipe Tips:
- While many other kinds of lettuce are fine, I highly recommend using Romaine. It is crispy and light on the stomach.
- You can also add corn cobs or kernels for added flavor and crunch. Croutons are also great if you want to add some carbohydrates.

- 2 large chicken breasts grilled and sliced
- 8 slices bacon cooked and crumbled
- 2 eggs hard-boiled
- 6 cups Romaine lettuce leaves washed and dried
- 1 cup grape tomatoes halved
- 1 avocado sliced
- 6 oz. blue cheese crumbled
- 1/2 cup croutons
- 1 cup mayonnaise
- 1 tablespoon olive oil
- 1 clove garlic
- 2 tablespoons lemon juice
- 2 tablespoons freshly grated parmesan cheese
- Salt and pepper to taste

Add all the dressing ingredients to a bowl, stir until well combined and smooth.

Taste and adjust for salt and pepper and add water if for a thinner consistency.

In a large salad bowl, add lettuce, tomatoes, cheese, and half of the croutons, toss to combine.

Top with chicken, bacon, avocado, and eggs.

Pour the dressing, top with the remaining croutons, and serve.
