Shrimp Cobb Salad with Avocado
Shrimp Cobb Salad is a hearty, elegant rendition of the classic Cobb. The fresh shrimp is seasoned and seared, then piled on crisp greens with blue cheese, bacon, eggs, corn, and other delicious toppings. Fancy enough for a party, but easy enough as a filling meal!
Having a busy day? No need to skip lunch! You need less than 30 minutes to enjoy a hearty Korean Beef Bowl, one-pan Peach Pork Chops, or Cheesy Chicken Fajita Quesadilla.
Shrimp Cobb Salad with Avocado
Shrimp Cobb Salad turns the traditional Cobb into a seafood delight. Instead of the typical grilled chicken, we’re using juicy, pan-fried shrimp as the main protein.
Blue cheese crumbles add a creamy bite in place of the usual cheddar. The result is a beautiful dish loaded with textures, colors, and flavors.
If you’re in the mood for a light and healthy lunch, this dish is always a winner. However, it’s also excellent for special occasions.
It looks so impressive served family-style with the all the ingredients arranged in nice rows on top!
Shrimp Cobb Salad Ingredients:
This recipe has three components: the seafood, the dressing, and the rest of the ingredients.
- To season the shrimp, you will need the juice of a lemon, salt and fresh black pepper, garlic powder, paprika. Set out some olive oil for frying.
- For the dressing, prepare more lemon juice, minced fresh garlic, freshly-shredded parmesan, Greek yogurt (sub sour cream if you want), and mayonnaise. Salt and pepper to taste.
- For the rest of the dish, prepare crispy bacon crumbles, hard boiled eggs, croutons, halved grape tomatoes, sliced avocados, and sweet corn. Crumble some blue cheese. Finally, wash and completely dry some Romaine or iceberg lettuce.
How to peel shrimp?
Twist and pull off the head. Pull out the legs. Peel of the shell beginning at the head end. You can keep the tail end for decorative purposes depending on the recipe, but for this one, take it off as well.
As you’re working, make sure the seafood stays cold by submerging them in ice water or ice cubes.
How to cook shrimp for salad?
- Toss the seafood lightly in oil and seasonings.
- Sear over medium high heat until golden and a bit of crust forms. Don’t overcook.
How to make Shrimp Cobb Salad?
- Make the dressing. Use a blender or food processor to blend dressing ingredients until smooth.
- Assemble. Place the greens at the bottom of your serving dish. Arrange the toppings in neat rows to showcase each ingredient.
- Serve. Drizzle the dressing on top, or place on the side so that guests can help themselves.
Shrimp Cobb Salad recipe variations:
- Grill the seafood: the grilled smokiness adds more flavor
- Add other vegetables: broccoli florets, carrots, and bell peppers are some great options
- Use other seafood: try the recipe with scallops, salmon, or lobster
- Use other meat: for a different protein, use roasted or grilled chicken, pork, or turkey
- Add crunch: almonds and walnuts add a nice crunch
The best dressing for Shrimp Cobb Salad?
To switch up the flavors, try this with Blue Cheese dressing, tangy Ranch, and Thousand Island. I also like eating it with garlicky homemade Caesar dressing. If you want to keep it light, a balsamic dressing or just very good olive oil will do.
What to serve with Shrimp cobb salad?
This dish is already filling enough on its own, but it’s also a great side to most mains. The flavors go particularly well with the easiest Chicken Marsala, Lemon Thyme Chicken, or Honey Citrus Salmon for a full seafood feast.
Can you make it ahead?
Yes, and the trick is to prepare the individual components separately. Chop and cook the toppings, whip up the dressing, and sear the seafood. Store in a sealed container. Assemble just before serving.

Recipe Tips:
- Feel free to use frozen seafood for this recipe. Just make sure to thaw ahead, drain, and blot the excess moisture out so you can get a good sear.
- Try chilling the lettuce leaves before serving to give it extra crisp.
- No need to devein. But if you prefer it without, use a paring knife to gently lift the dark vein, and finish pulling out with your finger.
